I worked with a Travel Channel crew in 2012 for their Nicaragua episode of “Street Foods International.” I took the team to the best spots in Managua, Granada, and Masaya for a range of dishes, from finger food and fritanga to a big, heavy ‘ole bowl of baho. Our featured eaters included Nicaraguan chef Hazel Cuadra, Nicholas “Nick.R.Agua” Melillo of Foundation Cigar Company, and myself and Darwin Escoto in the Ceviche Express scene.
