¡Que orgullo! I’m honored to be writing a recurring article for INSIDE LONGMONT, a new bi-monthly magazine sharing the stories of the people, places, and culture that shape our community in the City of Strongmont, Colorado. In each issue, I’ll highlight small, family-run taquerías across Longmont—celebrating their flavors, traditions, and the people behind the counter. In addition to Editor-in-Chief Barbara Platts, I’m collaborating with esteemed Longmont photographer Noah Katz, of NJK Photography, whose images bring these stories to life (and whose compañia makes these research trips bien salvaje).
As Arturo Silva, the owner of Marco’s Hot Dogs and Tacos on 17th Ave. likes to say, “Un taco al día es la clave para la alegría.” A taco a day is the key to happiness.
